Riced Cauliflower?

chickenfriedricedcauliflowerI’ll admit. I’m a skeptic. Okay, I was a skeptic. However, there’s a possibility I’ve been converted. Here’s the deal, I had roommate who was doing the whole Keto thing. I’m not discussing the pros or cons of the Keto diet. I’m here to talk about Cauliflower. Not my favorite vegetable. Not my least favorite vegetable either. Cauliflower is the one I’m never excited to see in my steamed veggies at a restaurant, but I don’t not eat it. I can’t say I’ve been on board with this whole riced cauliflower, cauliflower pizza crust, mashed cauliflower craze I’ve seen all over my social media. However, I tried the riced cauliflower, and I…didn’t hate it.  Okay, fine, I went back for seconds.

I made chicken fried rice with frozen riced cauliflower. It tasted like…chicken fried rice, and it was quicker and easier to cook. I’m still unsure about the cauliflower pizza crust or the mashed cauliflower, but I may be less hesitant about trying it.

If you’d like to try chicken friend riced cauliflower, do it! The recipe is below.

Ingredients:

1 package riced cauliflower with peas and carrots (you can get plain and add frozen stir fry vegetables, frozen mixed vegetables…whatever you think would be tasty)

2 boneless skinless chicken breasts

2 Tablespoons butter

1 egg

Soy sauce to taste

Directions:

In a large skillet, melt your butter. I like to use real butter, because you can brown it and add a bit of a nutty flavor. Dice chicken and cook in hot buttery skillet until done. While the chicken is cooking, thaw the riced cauliflower and spread on a paper towel to drain. Remove chicken and pat the cauliflower to remove as much moisture as possible. (if you don’t do this, it gets chewy) Gracefully dump the cauliflower in the same skillet you cooked the chicken in. Don’t worry about any butter or pieces of chicken left in the skillet. This is what gives it extra flavor! Add your frozen vegetables and heat the veggies through before adding the chicken back into the skillet. Make a hole in the center of the skillet by pushing the rest of ingredients to the side. Crack an egg in the center of the hole you just made and scramble it. Once the egg is cooked, slowly mix the rest of your ingredients in. Start with the bits nearest to the egg, and work your way to the edge to make sure the egg is evenly distributed. Add a bit of soy sauce to taste, and voila! Chicken Fried Riced Cauliflower!


Lake Love

IMG_1189Grand Lake holds a special place in my heart.  Dad’s parents had a home there for most of my childhood, and my memories of summers spent there are…magical. We’re talking back steps framed by huge Dahlias, the smell of freshly turned garden soil, the taste of home grown…everything, and the glint of sunlight on the water as I studied my Grandpa Bill’s fishing skills and tried to whistle through my front teeth just like he did.  Although my grandparents are gone now, Dad and his brothers and sisters rent a place there every summer.  There’s lots of laughing, talking and my God the food…well, we like to eat.  I’ll just say that much.

2015-06-21 08.17.12Last weekend we all got together for our long weekend, and Grandma Audrey and Grandpa Bill always seem to hover a bit closer these weekends.  I always get a little nostalgic when the lake weekend approaches, and this year my grandparents felt especially close. As I made my shopping lists and gathered my stuff, I suddenly got an urge for grape soda.  I don’t think I’ve tasted a grape soda that didn’t come out of my grandfather’s “pop fridge”.  My cousin’s little ones were very excited by the grape soda I brought, lots of “oohs” and “aahs” over the stuff.  A craving for strawberry shortcake overwhelmed me, and although my store bought strawberries were ripe and sweet, they still didn’t compare to the ones that came out of my grandmother’s garden in the back yard. (as opposed to the one in the lot across the street.  That one was Grandpa’s.)

I’ve visited Grand Lake (officially known as Grand Lake o’ the Cherokees) with other people, but it was never quite the same on those trips.  There weren’t any pickles Grandma Audrey made, there was no driveway lined 2015-06-21 09.34.53with flowers, and Grandpa Bill’s homemade ice cream was no where to be found. (Can you tell?  My family REALLY likes food!)

I learned a lot on that lake growing up.  My cousin taught me what firecrackers in an old metal coffee can sounded like; Dad taught me how to tell a really good scary story; and my Uncles showed me that sometimes it is better just to jump on in…even if the water is freezing.  I caught my first fish on that lake; dropped an expensive fishing pole to the bottom of it; learned to dive off my dad’s shoulders; watched Grandma make noodles (I haven’t figured that one out yet), helped teach (and I use that term VERY loosely) my cousin how to swim; caught fireflies; tried to lean how to grow things (my sister is MUCH better at that than I am); watched my mother run from a raccoon; and we laughed…a lot.

For me Grand Lake is filled with happy memories and love, and I wouldn’t have it any other way.  We’re making new memories on the lake now, and Spider-Man-like leaps, fish kisses, and my first experience with home-brewed whiskey are just a few (the whiskey was great…the morning after, not so much).  My sister’s strawberry preserves and homemade pickles are showstoppers, a new generation is learning how to fish, and we’re still laughing.  Fortunately, some things never change.

New Year’s Resolutions 2014

happy_new_year_266942Do you make New Year’s Resolutions?  I do.  For me it is less about the “New Year” and more about getting goals down on paper (or on your blog, as the case may be).  It is easy to remember New Year’s Day as a time to do this, but I make sure that I check in with those goals a couple of times over the course of the year as well.  Maybe I’ve got some of those that I can cross off the list.  Maybe some of them need adjusting, and, quite rarely, maybe everything is right on track.  Goals don’t do you any good if you just write them down and forget about them, right?

New Year’s Resolutions 2014

  1. Commit Random Acts of Kindness (at LEAST one per month)
    1. DVIS Volunteer
    2. Packages for homeless
    3. Food for…whoever
    4. Smile & wave at strangers (if nothing else, it will freak them out a little, but most likely it will just make their day better.)
  2. Make time to write more.  Set up a daily writing schedule and STICK TO IT (also make sure to eat and sleep, that didn’t happen with the last writing schedule).  I love it so DO it!
  3. Make time for my family.  They’re awesome and I love them, spend more time with them, for crying out loud!  Work in some one on one time with each of them every once in a while.  They are fun and entertaining, but they are more fun and entertaining one on one!
  4. Make time for my friends…see above.  Regularly schedule something together or separately once a month.
  5. Create a realistic, manageable, budget and find a way to keep it. (It doesn’t count if I write it down but never track it.)
  6. Take time for myself.  Nothing else works well, if I feel overwhelmed or too stressed.  Take at least an evening (or two) every week to de-stress and relax.
  7. Eat more meals at home.  (I am a great cook…do it!)
  8. Set up meal exchange with a friend (less cooking, more variety, and I might try a new thing or two)
  9. Eat more vegetables (I love veggies, I could practically be a vegetarian, well, three days a week, maybe.  Why don’t I eat more of them?)
  10. Utilize all the hundreds (maybe thousands?) of recipes I have
  11. Make more food myself and get rid of all the extra sodium and processed food.  I hate the way the processed food tastes…don’t eat so much of it.  I love baking bread, bake your own bread.  If I have extra, freeze it or give it away.  I’m doing a random act of kindness every month, give away food!  There are great freezer tips for freezing your own soup and etc.  USE THEM
  12. Exercise – Run with my friends, train to run a 5K in October.
  13. Drink more water…just because I can drink soda again doesn’t mean you SHOULD!
  14. Be healthier – mentally, physically, spiritually… ( This is perpetual, but still necessary.)
  15. Run the Tulsa Run 5K in October.
  16. Train my dog.  We’re not talking therapy dog training time here, just more training.  It is fun and you love it…do it!
  17. Read every day.  It relaxes me, I love it, it makes you smarter, and improves your writing…why don’t I do more of that and less Television?
  18. Treat myself to a massage every now and again…seriously, I need it.
  19. Actually go to all my doctor and dentist appointments.
  20. Say “No” once in a while.  No one is going to hate me forever if I tell them I can’t do something.  If they are going to hate me forever for saying “no” do I really want to hang around with them?
  21. Go someplace new…or that I haven’t been to in a really long time (I’m thinking London here.)  Seattle, New York, Austin, North Carolina, Paris, Morocco (Wow, that last one just kind of typed itself.  I didn’t actually know I wanted to go there, but yeah, let’s go to Morocco!)… There is a lot of this country I haven’t seen.  Not every trip has to be out of the U.S.  I know lots of people in lots of places, maybe I should visit them.
  22. Seriously look into growing my own vegetable and herb garden. (Not like last year where all I did to “look” was pin stuff on Pinterest.)  Look into structure, pricing materials, really plan this thing.
  23. Plant my own herbs. (Even if I don’t do a whole garden, set up something on the back porch with my favorite fresh herbs…it will save me a ton of money!)
